Halo-Halo
One serving has 244 kcal and 6 g protein, and at least a fifth of a woman's daily need of manganese (24%), copper (23%) and phosphorus (20%). Ready in 35 minutes.

- Preparation: 20 min
- Cooking: 15 min
- Makes: 1 serving (290 g)
- Difficulty: Easy
- Diets: Vegetarian, Gluten-free
- Contains: dairy
Ingredients
- 20 g Kidney beans, red, canned
- 20 g Jackfruit, raw
- 30 g Yam, raw
- 15 g Coconut, fresh
- 40 g Evaporated milk
- 15 g Sugar
- 150 g Water
Method
- Peel and dice the yam, standing in for ube, then steam until tender, about 15 minutes, and mash with a little of the sugar to make a simple ube-style paste.
- Warm the kidney beans and jackfruit each with a little of the remaining sugar to lightly sweeten them, then cool.
- Fill a tall glass with finely crushed ice (represented here by the water, which you'd freeze and shave).
- Spoon the sweetened kidney beans, jackfruit, mashed yam and shredded fresh coconut over the ice in colourful layers.
- Pour the evaporated milk over the top just before serving.
- Stir everything together at the table so all the layers mix, as is traditional for halo-halo (Tagalog for 'mix-mix').
