  • Makes: 1 serving (677 g)
  • Difficulty: Hard
  • Diets: Dairy-free, High protein
  • Contains: beef, gluten, peanut, shellfish

Ingredients

  • 170 g Beef short ribs, raw
  • 40 g Peanut butter
  • 60 g Eggplant, raw
  • 40 g Yardlong beans, raw
  • 50 g Bok choy, raw
  • 8 g Rice flour
  • 30 g Onions, raw
  • 8 g Garlic, raw
  • 10 g Oyster sauce
  • 10 g Vegetable oil
  • 250 g Water
  • 1 g Sazón seasoning

Method

  1. Simmer the beef short ribs, standing in for oxtail, in the water for 2-2.5 hours, covered, until completely fork-tender, topping up water as it reduces; skim off any scum.
  2. Toast the rice flour in a dry pan over low heat, stirring, for 2-3 minutes until fragrant and pale golden; this stands in for the toasted ground rice traditionally used to thicken the stew.
  3. Sauté the onion and garlic in the oil until soft, then stir in the annatto seasoning and the peanut butter, thinning with a ladleful of the beef broth.
  4. Stir the peanut mixture and toasted rice flour into the pot of beef and broth, and simmer for 10 minutes until the sauce thickens and turns rich and glossy.
  5. Add the eggplant and yardlong beans and simmer for 8-10 minutes until just tender, then add the bok choy and cook for 2 more minutes until wilted.
  6. Stir in the oyster sauce (standing in for the fermented shrimp paste traditionally stirred through, or served alongside) and serve hot with rice.
