  • Makes: 1 serving (216 g)
  • Difficulty: Medium
  • Diets: Vegan, Gluten-free, Dairy-free

Ingredients

  • 50 g Rice flour
  • 30 g Sugar, brown
  • 120 g Water
  • 0.5 g Baking soda
  • 15 g Coconut, fresh

Method

  1. Whisk the rice flour with the brown sugar, water and baking soda (standing in for the traditional lye water) until completely smooth with no lumps.
  2. Pour the batter into small oiled cups, filling each about three-quarters full.
  3. Steam over boiling water for 25-30 minutes, until the cakes turn a deep amber, translucent and firm with a slightly springy, chewy texture.
  4. Remove from the steamer and let cool for at least 15 minutes so they firm up further.
  5. Run a knife around the edge of each cup to loosen, then unmould.
  6. Serve at room temperature with the grated fresh coconut sprinkled or pressed on top.
