- Cooking: 61 min
- Makes: 1 serving (217 g)
- Difficulty: Hard
- Diets: Dairy-free, Low carb
- Contains: gluten, pork, soy
Ingredients
- 170 g Pork belly, raw
- 1 g Bay leaves
- 1 g Black pepper
- 1.5 g Salt
- 8 g Garlic, raw
- 20 g Vegetable oil
- 10 g Vinegar, white
- 5 g Soy sauce
Method
- Simmer the pork belly in a pot of water with the bay leaf, half the garlic, black pepper and half the salt for 45-50 minutes until tender; drain well and pat completely dry.
- Let the boiled pork belly air-dry, uncovered, in the refrigerator for at least 1 hour so the skin crisps better; rub the remaining salt over it just before frying.
- Heat the oil in a deep pot to about 180°C (350°F).
- Carefully lower in the pork belly and deep-fry for 10-12 minutes, turning occasionally, until deeply golden and the skin is crackling and blistered.
- Drain well and rest for a few minutes, then chop into serving pieces.
- Mix the vinegar, soy sauce and remaining garlic for a dipping sauce, and serve alongside.
