  • Preparation: 260 min
  • Makes: 1 serving (190 g)
  • Difficulty: Easy
  • Diets: Vegetarian
  • Contains: dairy, gluten, honey

Ingredients

  • 25 g Graham crackers
  • 60 g Cream, heavy
  • 25 g Sweetened condensed milk
  • 80 g Mango, raw

Method

  1. This is for one portion (one small glass or one slice); multiply everything by 6-8 to fill a loaf pan for a whole cake to share.
  2. Whip the cream to soft peaks, then fold in the condensed milk to make a light, sweet cream.
  3. Peel the mango and slice it thinly.
  4. In a small glass or dish, layer graham crackers, a spoonful of the sweetened cream and a layer of mango slices, repeating until you run out, finishing with cream and a few mango slices on top.
  5. Cover and refrigerate for at least 4 hours, or overnight, so the crackers soften into cake-like layers.
  6. Serve cold, straight from the fridge.
