- 70 g Rice flour, glutinous
- 90 g Coconut milk, canned
- 30 g Sugar
- 20 g Yam, raw
- 15 g Jackfruit, raw
- 10 g Coconut, fresh
Method

- Mix the glutinous rice flour, coconut milk and sugar together, then divide the batter into three equal portions.
- Mix the mashed yam into one portion, the mashed jackfruit into a second portion, and leave the third portion plain white.
- Pour the yam portion into an oiled dish and steam for 10 minutes until just set, then carefully pour the plain portion on top and steam for another 10 minutes, then finally add the jackfruit portion and steam for a final 15 minutes until all layers are fully cooked through.
- Let the cake cool completely, ideally for a couple of hours, so the layers firm up and slice cleanly.
- Top with the grated fresh coconut before slicing and serving.
