Ingredients

  • 200 g Rice, white, long-grain, cooked
  • 15 g Garlic, raw
  • 12 g Vegetable oil
  • 1 g Salt

Method

  1. Mince the garlic finely.
  2. Heat the oil in a wok or pan over medium heat and fry the garlic slowly, stirring often, until golden and crisp; take care not to burn it.
  3. Remove about half the garlic for garnish, leaving the rest and the garlic-infused oil in the pan.
  4. Add the cold, day-old rice, breaking up any clumps, and stir-fry over medium-high heat for 4-5 minutes until heated through and the grains are separate and glossy.
  5. Season with the salt.
  6. Serve hot, topped with the reserved crispy garlic.
