- Preparation: 10 min
- Cooking: 55 min
- Makes: 1 serving (863 g)
- Difficulty: Medium
- Diets: Gluten-free, Dairy-free
- Contains: fish, pork
Ingredients
- 130 g Pork belly, raw
- 20 g Tamarind pulp
- 500 g Water
- 50 g Daikon radish, raw
- 40 g Tomatoes, raw
- 30 g Onions, raw
- 50 g Water spinach, raw
- 30 g Yardlong beans, raw
- 5 g Chili peppers, green, raw
- 8 g Fish sauce
Method
- Place the pork belly in a pot, cover with the water, bring to a boil, and skim off any scum; lower the heat and simmer for 30-40 minutes until nearly tender.
- Add the tamarind pulp and simmer for 5 minutes, then mash it into the broth to release the sour flavour, straining out the fibrous solids.
- Add the onion, tomato and daikon and simmer for 10 minutes until they start to soften.
- Add the yardlong beans and chili and simmer for 5 more minutes.
- Season with the fish sauce, then stir in the water spinach and cook just until wilted, 1-2 minutes.
- Serve hot with rice, adjusting the sourness with a little more tamarind if you like.
