  • Cooking: 50 min
  • Makes: 1 serving (256 g)
  • Difficulty: Medium
  • Diets: Gluten-free, Dairy-free, High protein, Low carb
  • Contains: egg, mustard, pork

Ingredients

  • 160 g Pork hock, raw
  • 30 g Onions, red, raw
  • 15 g Chili peppers, green, raw
  • 10 g Lime juice
  • 10 g Mayonnaise
  • 30 g Eggs, whole, raw
  • 0.5 g Salt
  • 0.3 g Black pepper

Method

  1. Simmer the pork hock in water to cover for about 35 minutes, until tender, then drain and let it cool enough to handle. Traditional sisig uses chopped pig face and ears; the mix of skin, fat and meat on a hock is used here as the closest stand-in.
  2. Pat the pork dry, then sear or grill it over high heat for 8-10 minutes, turning now and then, until the skin is well browned and a little crisp.
  3. Chop the pork very finely with a knife (or pulse briefly in a food processor) into small bits.
  4. Heat a sizzling plate or heavy skillet, add the chopped pork, onion and chilies, and toss over high heat for 2-3 minutes until sizzling hot throughout.
  5. Push the pork to one side, crack in the egg, and stir it into the very hot pork for about a minute so the residual heat cooks it through rather than serving it raw - important if anyone eating is pregnant, very young, older or unwell.
  6. Stir in the mayonnaise, lime juice, salt and black pepper, and serve immediately while still sizzling.
