  • Difficulty: Medium
  • Diets: Dairy-free, High protein
  • Contains: egg, fish, gluten, pork, shellfish, soy, sulphite

Ingredients

  • 90 g Egg noodles, dry
  • 80 g Pork, ground, raw
  • 5 g Mushrooms, shiitake, dried
  • 30 g Surimi
  • 5 g Vinegar, balsamic
  • 4 g Sriracha
  • 5 g Garlic, raw
  • 5 g Scallions, raw
  • 6 g Soy sauce
  • 2 g Sugar
  • 5 g Lard

Method

  1. Soak the dried shiitake mushroom in warm water for 15 minutes, then drain and dice finely.
  2. Boil the egg noodles (mee pok is the traditional flat noodle) for 2 minutes, then drain and toss with the lard to stop them sticking.
  3. Melt the lard in a pan over medium-high heat, add the garlic and cook 30 seconds, then add the minced pork and mushroom.
  4. Cook the pork, breaking it up with a spoon, for 4-5 minutes until it is no longer pink and cooked through (74°C/165°F).
  5. Stir in the soy sauce and sugar, then add the sliced fish balls (surimi is a workable stand-in) and warm them through for 1 minute.
  6. Toss the noodles with the black vinegar and chilli sauce in a bowl, then spoon the pork mixture on top.
  7. Scatter over the scallions and serve at once, mixing everything together just before eating.
