Ingredients

  • 180 g Crab, raw
  • 40 g Ketchup
  • 10 g Sriracha
  • 10 g Garlic, raw
  • 5 g Ginger, fresh
  • 25 g Eggs, whole, raw
  • 8 g Sugar
  • 5 g Cornstarch
  • 60 g Water
  • 15 g Vegetable oil
  • 5 g Scallions, raw

Method

  1. Clean the crab, cracking the claws and cutting the body into pieces so the sauce can reach the meat.
  2. Whisk the cornstarch into 20 g of the water to make a slurry, and keep the rest of the water aside.
  3. Heat the oil in a wok, fry the garlic, ginger and chilli paste for 1-2 minutes until fragrant.
  4. Stir in the ketchup, sugar and remaining water, bring to a simmer, then add the crab pieces and cover.
  5. Cook for 8-10 minutes, turning the crab once, until the shell is bright red and the meat is opaque and cooked through.
  6. Stir in the cornstarch slurry and simmer 1 minute until the sauce thickens slightly, then drizzle in the beaten egg while stirring so it sets in ribbons.
  7. Scatter with scallions and serve with crusty bread or steamed buns to mop up the sauce.
