Chwee Kueh (Steamed Rice Cakes)
One serving has 333 kcal and 4 g protein, and at least a fifth of a woman's daily need of manganese (42%), vitamin K (27%), pyridoxine (26%), vitamin C (22%) and copper (20%). Ready in 45 minutes.

- Preparation: 20 min
- Cooking: 25 min
- Makes: 1 serving (340 g)
- Difficulty: Medium
- Diets: Vegan, Dairy-free
- Contains: gluten, soy
Ingredients
- 45 g Rice flour
- 200 g Water
- 5 g Cornstarch
- 0.5 g Salt
- 12 g Vegetable oil
- 60 g Daikon radish, raw
- 4 g Soy sauce
- 3 g Sugar
- 8 g Garlic, raw
- 2 g Chilies, dried red
Method
- Whisk the rice flour, cornstarch and salt with the water into a thin batter and let rest 15 minutes.
- Grease small heatproof bowls or a chwee kueh mold with a little of the oil, pour in the batter, and steam for 15-20 minutes until set and translucent.
- Meanwhile, finely dice the daikon, toss with a pinch of salt and let sit 10 minutes to draw out moisture, then squeeze dry; this stands in for the traditional salted preserved radish (chai poh).
- Fry the garlic in the remaining oil until fragrant, add the diced daikon, soy sauce, sugar and chili, and stir-fry 6-8 minutes until dry and lightly caramelized.
- Unmold the steamed rice cakes onto a plate and top generously with the fried radish.
