Soon Kueh (Bamboo Shoot Dumplings)
One serving has 264 kcal and 5 g protein, and at least a fifth of a woman's daily need of copper (38%) and pantothenic acid (20%). Ready in 45 minutes.

- Preparation: 30 min
- Cooking: 15 min
- Makes: 1 serving (200 g)
- Difficulty: Hard
- Diets: Pescatarian, Dairy-free
- Contains: gluten, shellfish, soy
Ingredients
- 30 g Potato starch
- 10 g Tapioca pearls, dry
- 50 g Water
- 8 g Vegetable oil
- 50 g Jicama, raw
- 25 g Bamboo shoots, canned
- 4 g Mushrooms, shiitake, dried
- 15 g Shrimp, raw
- 4 g Garlic, raw
- 3 g Soy sauce
- 0.2 g White pepper
- 0.5 g Salt
Method
- Mix the potato starch and tapioca with the water and a little of the oil; cook over low heat, stirring constantly, until it forms a translucent, sticky dough, then knead briefly once cool enough to handle. This stands in for the traditional wheat and tapioca starch skin.
- Soak the dried shiitake in warm water until soft, then finely dice with the jicama and bamboo shoots.
- Fry the garlic in the remaining oil, add the diced vegetables and shrimp, and stir-fry 4-5 minutes with the soy sauce, white pepper and salt until just tender; cool.
- Roll small portions of the dough into thin rounds, spoon in the filling, and fold into a pleated half-moon dumpling.
- Steam for 10-12 minutes until the skin turns glossy and translucent.
