  • Makes: 1 serving (287 g)
  • Difficulty: Medium
  • Diets: Pescatarian, Dairy-free
  • Contains: egg, fish, gluten, peanut, sesame

Ingredients

  • 90 g Salmon, raw
  • 30 g Carrots, raw
  • 30 g Daikon radish, raw
  • 40 g Pomelo, raw
  • 20 g Jicama, raw
  • 8 g Lime juice
  • 20 g Plum sauce
  • 8 g Vegetable oil
  • 10 g Peanuts, roasted
  • 3 g Sesame seeds
  • 15 g Wonton wrappers
  • 10 g Ginger, pickled
  • 3 g Sugar
  • 0.2 g Anise seed
  • 0.2 g White pepper

Method

  1. Slice the salmon thinly; use only fresh, sushi-grade fish that has been frozen first (-20 °C/-4 °F for at least 7 days) to kill parasites, since it will not be cooked, and anyone pregnant should skip raw fish altogether.
  2. Fry the wonton wrappers in the oil until crisp and golden, then break into shards for the crispy garnish.
  3. Finely shred the carrot, daikon, pomelo and jicama and arrange on a plate.
  4. Scatter over the pickled ginger, crushed peanuts, sesame seeds, a pinch of five-spice (anise seed) and the white pepper.
  5. Arrange the raw salmon over the top, drizzle with the plum sauce, lime juice, remaining oil and the sugar, and scatter over the crispy shards.
  6. Just before eating, everyone tosses the ingredients together high with chopsticks while wishing for prosperity, mixing everything well.
