Cho Muang (Purple Flower Dumplings)
One serving has 354 kcal and 11 g protein, and at least a fifth of a woman's daily need of manganese (31%), niacin (30%), pyridoxine (27%) and phosphorus (20%). Ready in 40 minutes.

- Preparation: 25 min
- Cooking: 15 min
- Makes: 1 serving (150 g)
- Difficulty: Hard
- Diets: Gluten-free, Dairy-free
- Contains: peanut, poultry
Ingredients
- 25 g Tapioca pearls, dry
- 15 g Rice flour
- 30 g Water
- 40 g Chicken, ground, raw
- 15 g Sugar, brown
- 10 g Peanuts, roasted
- 5 g Shallots, raw
- 10 g Coconut cream
- 0.2 g Salt
Method
- Cook the chicken with the brown sugar, fried shallot, crushed peanuts, coconut cream and salt over low heat, stirring, until it forms a sticky, sweet-savory filling; cool.
- Mix the tapioca and rice flour with the water and cook gently, stirring, until it forms a soft, pliable dough; it is traditionally dyed purple with butterfly-pea flower, which this version leaves natural.
- Flatten a piece of the dough, wrap around a portion of the filling, and shape into a five-petaled flower by pinching the edges.
- Steam for 10-12 minutes until the dough turns glossy and translucent.
- Cool slightly before serving, as the filling is very hot.
