  • Cooking: 15 min
  • Makes: 1 serving (110 g)
  • Difficulty: Hard
  • Diets: Vegetarian, Gluten-free, Dairy-free
  • Contains: egg

Ingredients

  • 40 g Egg yolks, raw
  • 40 g Sugar
  • 30 g Water

Method

  1. Bring the sugar and water to a simmer in a wide, shallow pan and cook for 2-3 minutes to make a light syrup; keep it at a gentle simmer.
  2. Strain the egg yolks through a fine sieve to make them perfectly smooth and remove the stringy membranes.
  3. Spoon the yolks into a small piping bag or a paper cone with a very fine tip.
  4. Drizzle the yolks over the simmering syrup in thin, continuous circular threads, working quickly so they don't pool.
  5. Cook each batch of threads for about 30 seconds, just until set but still tender, then lift out with a fork or chopsticks onto a plate.
  6. Gently gather the threads into a loose coil while still warm, and repeat with the remaining yolk until all the syrup is used.
  7. Serve at room temperature; the threads keep their delicate sweetness on their own or as a garnish for other Thai desserts.
