  • Makes: 1 serving (665 g)
  • Difficulty: Medium
  • Diets: Dairy-free, High protein
  • Contains: egg, fish, gluten, mustard, poultry

Ingredients

  • 70 g Egg noodles, dry
  • 150 g Chicken thighs, boneless, skinless, raw
  • 120 g Coconut milk, canned
  • 10 g Curry powder
  • 5 g Chilies, dried red
  • 12 g Shallots, raw
  • 6 g Garlic, raw
  • 8 g Fish sauce
  • 4 g Sugar
  • 10 g Vegetable oil
  • 15 g Mustard greens, pickled
  • 5 g Lime juice
  • 250 g Water

Method

  1. Boil a small handful of the noodles until just tender, then fry a few strands in a little of the oil until crisp for the topping; boil the remaining noodles normally and divide into a bowl.
  2. Pound or blend the chili, shallot and garlic with the curry powder into a paste, then fry in the remaining oil until fragrant.
  3. Add the chicken and cook 2-3 minutes, then stir in the coconut milk and water (about 370 g of liquid in all, mostly water, so the broth is generous enough for a full bowl), along with the fish sauce and sugar, and simmer 15-20 minutes until the chicken is cooked through (74 °C/165 °F).
  4. Ladle the curry and chicken over the noodles.
  5. Top with the crispy fried noodles, pickled mustard greens and a squeeze of lime juice, with extra shallot on the side.
