  • Preparation: 250 min
  • Cooking: 15 min
  • Makes: 1 serving (136 g)
  • Difficulty: Hard
  • Diets: Vegan, Gluten-free, Dairy-free

Ingredients

  • 40 g Mung beans, dried
  • 20 g Sugar
  • 15 g Coconut milk, canned
  • 1 g Agar, dried
  • 60 g Water

Method

  1. Soak the mung beans for several hours, then steam until very tender.
  2. Mash the beans smooth with the sugar and coconut milk, and cook over low heat, stirring, until the mixture thickens into a pliable dough; cool.
  3. Shape small portions into miniature fruits, such as tiny mangoes or chilies; natural food colorings are traditional, though this version leaves them plain.
  4. Dissolve the agar in the water, bring to a boil, then cool slightly until just starting to thicken.
  5. Dip each shaped piece into the agar mixture to coat in a thin, glossy jelly skin, and let set before serving.
