- Preparation: 180 min
- Cooking: 35 min
- Makes: 1 serving (131 g)
- Difficulty: Medium
- Diets: Gluten-free, Dairy-free, Low carb
- Contains: fish, pork
Ingredients
- 100 g Pork belly, raw
- 1.2 g Salt
- 5 g Vinegar, white
- 10 g Vegetable oil
- 5 g Fish sauce
- 5 g Chili peppers, red, raw
- 5 g Lime juice
Method
- Score the pork belly skin in a diamond pattern, rub the skin with the vinegar and salt, and air-dry uncovered in the fridge for at least 3 hours (overnight is best) so the skin dries out fully.
- Bring a pot of water to a boil, lower in the pork skin-side down and simmer 15 minutes to firm the meat, then drain and pat completely dry.
- Heat the oil in a wok or deep pan to about 180 °C (350 °F) and fry the pork, turning occasionally, for 15-20 minutes until the skin blisters and turns deep golden and crackly and the meat is cooked through.
- Drain on paper towels, rest 5 minutes, then chop into bite-sized pieces.
- Stir the fish sauce, chili and lime juice together for a quick dipping sauce and serve alongside the pork.
