Roti Sai Mai (Thai Cotton Candy Roti)
One serving has 199 kcal and 4 g protein. Ready in 37 minutes.

- Preparation: 30 min
- Cooking: 7 min
- Makes: 1 serving (73 g)
- Difficulty: Hard
- Diets: Vegetarian
- Contains: dairy, egg, gluten
Ingredients
- 15 g Flour, all-purpose
- 10 g Eggs, whole, raw
- 20 g Milk, whole
- 25 g Sugar
- 3 g Butter, unsalted
Method
- Melt the sugar in a dry heavy pan over medium heat, swirling (not stirring) until it becomes a pale amber syrup, about 5 minutes; pour onto an oiled tray and let cool just until workable.
- Once cool enough to handle but still pliable, repeatedly stretch and fold the sugar, dusting your hands with a little flour, until it separates into fine, silky white threads, 10-15 minutes of practice.
- Whisk the flour, egg and milk into a thin, smooth batter.
- Melt the butter on a hot nonstick griddle and pour on a thin layer of batter, swirling to coat; cook 1-2 minutes until just set and lightly golden, without browning.
- Lay a handful of the sugar floss on the crepe, roll or fold it up, and serve right away before the floss dissolves.
