  • Makes: 1 serving (217 g)
  • Difficulty: Medium
  • Diets: Gluten-free, Dairy-free, Low carb
  • Contains: fish, pork

Ingredients

  • 150 g Pork, ground, raw
  • 10 g Lemongrass, raw
  • 10 g Ginger, fresh
  • 8 g Garlic, raw
  • 15 g Shallots, raw
  • 8 g Chili peppers, red, raw
  • 1 g Turmeric
  • 5 g Cilantro, fresh
  • 8 g Fish sauce
  • 2 g Lemon zest

Method

  1. Finely chop the lemongrass, ginger (a stand-in for galangal, if you can't find it), garlic, shallots and chilli, or pound them into a paste.
  2. Mix the paste thoroughly into the minced pork along with the turmeric, cilantro, fish sauce and lemon zest (in place of kaffir lime leaf).
  3. Knead the mixture with your hand for a couple of minutes until it turns slightly sticky, which helps it hold together on the grill.
  4. Shape the mixture into a coil about 2 cm thick on a sheet of oiled foil, or stuff it into a natural casing if you have one.
  5. Grill over medium coals, or under a hot broiler, for 15-18 minutes, turning occasionally, until well browned outside.
  6. Check the centre is fully cooked through with no pink remaining and juices run clear (74°C/165°F) before serving.
  7. Rest for 2-3 minutes, then slice and serve with fresh cabbage, chillies and sticky rice.
