Thong Yot (Golden Egg Yolk Drops)
One serving has 364 kcal and 6 g protein, and at least a fifth of a woman's daily need of choline (77%), selenium (41%), cobalamin (33%), pantothenic acid (24%), phosphorus (22%) and vitamin A (22%). Ready in 35 minutes.

- Preparation: 15 min
- Cooking: 20 min
- Makes: 1 serving (141 g)
- Difficulty: Hard
- Diets: Vegetarian, Gluten-free, Dairy-free
- Contains: alcohol, egg
Ingredients
- 40 g Egg yolks, raw
- 60 g Sugar
- 40 g Water
- 1 g Vanilla extract
Method
- Beat the egg yolks and strain through a fine sieve to remove the chalazae for a silky-smooth mixture; this recipe makes one portion of about 8-10 sweet drops, so multiply everything for more servings.
- Bring the sugar, water and vanilla to a gentle boil in a wide, shallow pan, then reduce to a bare simmer to make a light sugar syrup.
- Working quickly, drop small amounts of the yolk (using a piping bag or teaspoon) into the simmering syrup and poach each drop about 1 minute until just set and no longer runny.
- Lift the golden drops out with a slotted spoon and let them cool in a little extra syrup before serving.
