  • Makes: 1 serving (237 g)
  • Difficulty: Easy
  • Diets: Vegetarian, Gluten-free, Dairy-free
  • Contains: honey

Ingredients

  • 2 g Agar, dried
  • 200 g Water
  • 15 g Sugar
  • 15 g Lime juice
  • 5 g Honey

Method

  1. Aiyu jelly is traditionally set by massaging fig seeds in water until they release a natural pectin; this version uses agar as a stand-in gelling agent.
  2. Dissolve the agar in the water, bring to a boil, stirring, and simmer 2 minutes.
  3. Pour into a shallow dish and chill for at least 2 hours until firmly set, then dice into small cubes.
  4. Stir the sugar and honey into a little warm water to make a light syrup, then stir in the lime juice once cool.
  5. Spoon the jelly cubes into a glass, pour over the honey-lime syrup, and add ice to serve cold.
