  • Makes: 1 serving (271 g)
  • Difficulty: Hard
  • Diets: Dairy-free
  • Contains: gluten, pork, shellfish, soy

Ingredients

  • 35 g Tapioca pearls, dry
  • 15 g Potato starch
  • 100 g Water
  • 60 g Pork, ground, raw
  • 3 g Mushrooms, shiitake, dried
  • 20 g Bamboo shoots, canned
  • 8 g Shallots, raw
  • 6 g Soy sauce
  • 3 g Sugar
  • 5 g Cornstarch
  • 4 g Oyster sauce
  • 3 g Sriracha
  • 8 g Vegetable oil
  • 0.5 g Salt

Method

  1. Mix the tapioca and potato starch with the water into a smooth, thin batter and let rest 15 minutes.
  2. Cook the batter in a small oiled heatproof bowl set over simmering water, stirring often at first, until it turns thick, glossy and translucent, then press it up the sides of the bowl to form a shell.
  3. Soak the shiitake until soft and dice; mix with the pork, bamboo shoot, shallot, soy sauce and a pinch of the salt for the filling, and spoon into the starch shell, covering with a little more of the batter to seal.
  4. Steam for 25-30 minutes until the wrapper is fully translucent and the filling is cooked through (74 °C/165 °F).
  5. Simmer the oyster sauce, remaining soy sauce, sugar, cornstarch and a splash of water until thickened into a glossy sauce.
  6. Unmold the ba-wan onto a plate, spoon over the sauce, and finish with the chili sauce.
