  • Makes: 1 serving (535 g)
  • Difficulty: Medium
  • Diets: Dairy-free, High protein
  • Contains: celery, egg, gluten, pork, poultry, shellfish, soy, sulphite

Ingredients

  • 60 g Egg noodles, dry
  • 50 g Pork, ground, raw
  • 40 g Shrimp, raw
  • 5 g Garlic, raw
  • 10 g Shallots, raw
  • 6 g Soy sauce
  • 3 g Sugar
  • 130 g Chicken stock, homemade
  • 200 g Water
  • 20 g Bean sprouts, raw
  • 3 g Cilantro, fresh
  • 3 g Vinegar, balsamic
  • 5 g Vegetable oil

Method

  1. Heat the oil in a small pot, fry half the garlic and all the shallots until golden, then add the minced pork.
  2. Cook the pork for 5-6 minutes, breaking it up, until it is cooked through (74°C/165°F) and lightly browned.
  3. Stir in the soy sauce and sugar and simmer gently for 15 minutes to make a rich, sticky braised pork topping (rou zao).
  4. Bring the stock and water to a simmer in a separate pot, season lightly, and poach the shrimp in it for 2 minutes until pink; lift out the shrimp.
  5. Blanch the noodles and bean sprouts in the same simmering broth for 1-2 minutes, then divide between bowls.
  6. Ladle the hot broth over the noodles, and top with the braised pork, poached shrimp, remaining raw garlic and cilantro.
  7. Finish with a dash of black vinegar at the table, which is traditional for cutting through the richness.
