  • Makes: 1 serving (452 g)
  • Difficulty: Medium
  • Diets: Dairy-free
  • Contains: celery, gluten, poultry, shellfish, soy, sulphite

Ingredients

  • 80 g Oysters, raw
  • 40 g Somen noodles, dry
  • 100 g Chicken stock, homemade
  • 200 g Water
  • 8 g Garlic, raw
  • 10 g Cornstarch
  • 3 g Soy sauce
  • 0.3 g White pepper
  • 3 g Cilantro, fresh
  • 5 g Vinegar, balsamic
  • 3 g Sriracha

Method

  1. Break the thin wheat vermicelli (mee sua; somen noodles are a close stand-in) into short lengths and set aside.
  2. Bring the stock and water to a simmer in a pot, then whisk the cornstarch with a splash of cold water and stir it in to lightly thicken the broth.
  3. Add the noodles and simmer for 2-3 minutes until they soften and the broth turns glossy.
  4. Add the oysters and poach gently for 2 minutes, just until they plump up and turn opaque; avoid a hard boil or they'll toughen.
  5. Fry the garlic in a small dry pan until golden and fragrant, then stir it, the soy sauce and white pepper into the soup.
  6. Ladle into bowls and top with cilantro, a drizzle of black vinegar and a little chilli sauce, both stirred in just before eating.
