Stinky Tofu
One serving has 380 kcal and 22 g protein, and at least a fifth of a woman's daily need of manganese (88%), calcium (85%), vitamin K (80%), copper (53%), selenium (39%) and phosphorus (36%). Ready in 2895 minutes.

- Preparation: 2880 min
- Cooking: 15 min
- Makes: 1 serving (189 g)
- Difficulty: Medium
- Diets: Vegan, Dairy-free, Low carb
- Contains: gluten, mustard, soy
Ingredients
- 120 g Tofu, firm
- 1.5 g Salt
- 20 g Vegetable oil
- 30 g Mustard greens, pickled
- 8 g Sriracha
- 3 g Garlic, raw
- 4 g Soy sauce
- 2 g Sugar
Method
- Traditionally the tofu ferments for weeks in a brine of fermented vegetable liquid until pungent; here, cut the tofu into pieces and soak in a strong brine of the salt dissolved in water for 24-48 hours in the fridge to start the characteristic tang, then pat dry (a fully fermented brine needs several more days to reach its full pungency).
- Heat the oil to 180 °C (350 °F) and deep-fry the tofu for 4-5 minutes until the surface is deeply crisp and golden.
- Mix the sriracha, garlic, soy sauce and sugar into a chili-garlic dipping sauce.
- Drain the tofu and serve hot with the pickled cabbage (mustard greens stand in) and the chili-garlic sauce.
