  • Difficulty: Medium

  • Contains: alcohol, gluten, poultry, sesame, soy, sulphite

Ingredients

  • 180 g Chicken thighs, skin-on, raw
  • 12 g Sesame oil
  • 10 g Soy sauce
  • 15 g Wine, fortified, dry
  • 10 g Ginger, fresh
  • 10 g Garlic, raw
  • 10 g Basil, fresh
  • 5 g Sugar
  • 2 g Chilies, dried red

Method

  1. Cut the chicken thighs into bite-sized pieces and slice the ginger into thick coins.
  2. Heat the sesame oil in a clay pot or heavy skillet and fry the ginger and garlic cloves over medium heat for 2-3 minutes until fragrant.
  3. Add the chicken and dried chilli, and fry for 5-6 minutes until the pieces are browned on all sides.
  4. Pour in the rice wine, soy sauce and sugar, stir well, cover, and simmer for 12-15 minutes, until the chicken is cooked through (74°C/165°F) and the sauce has reduced to a thick glaze.
  5. Uncover and cook 2-3 minutes more, stirring often, until the sauce clings to the chicken almost like a lacquer.
  6. Remove from the heat, stir in the fresh basil leaves until just wilted, and serve immediately over rice.
