  • Contains: fish, shellfish

Ingredients

  • 40 g Rice flour
  • 135 g Water
  • 0.8 g Salt
  • 15 g Shrimp, raw
  • 10 g Scallions, raw
  • 12 g Vegetable oil
  • 10 g Shallots, raw
  • 8 g Fish sauce
  • 5 g Sugar
  • 5 g Lime juice

Method

  1. Cook the shrimp in a little boiling water for 2 minutes until pink, drain, then finely chop to resemble dried shrimp.
  2. Whisk the rice flour, most of the water and a pinch of the salt into a thin, smooth batter.
  3. Pour a thin layer of batter into small greased dishes or ramekins and steam over boiling water for 8-10 minutes until set and slightly translucent.
  4. Meanwhile fry the sliced shallot in the oil until golden and crisp, then use the same oil to briefly sauté the chopped scallion for a fragrant scallion oil.
  5. Whisk the fish sauce, sugar, lime juice and remaining water together for the dipping sauce.
  6. Unmold the little cakes, top with the chopped shrimp, fried shallot and scallion oil, and serve with the dipping sauce.
