Ingredients

  • 60 g Rice flour
  • 10 g Tapioca pearls, dry
  • 150 g Water
  • 55 g Eggs, whole, raw
  • 10 g Scallions, raw
  • 15 g Vegetable oil
  • 8 g Soy sauce
  • 15 g Carrots, raw
  • 15 g Daikon radish, raw
  • 5 g Vinegar, white

Method

  1. Whisk the rice flour, tapioca pearls and water into a smooth batter, then cook in a pot over medium heat, stirring constantly, until it thickens into a stiff, glossy paste.
  2. Spread the paste into a greased dish, cool completely, then cut into small cubes once firm.
  3. Meanwhile toss the julienned carrot and daikon with the vinegar and sugar for a quick pickle; set aside.
  4. Heat the oil in a nonstick pan and fry the rice-flour cubes over medium heat, turning, until crisp and golden on several sides.
