  • Makes: 1 serving (171 g)
  • Difficulty: Easy

  • Contains: alcohol

Ingredients

  • 80 g Bananas, raw
  • 30 g Rice flour, glutinous
  • 40 g Coconut milk, canned
  • 20 g Sugar, brown
  • 1 g Vanilla extract

Method

  1. Mash the bananas well and mix with the rice flour, coconut milk, sugar and vanilla into a smooth batter; this makes one portion (one slice), so multiply by 6-8 for a whole cake.
  2. Pour into a greased loaf pan or banana-leaf-lined dish.
  3. Steam over simmering water, or bake at 180 °C (350 °F), for 40-45 minutes until set and a skewer comes out clean.
  4. Cool for at least 20 minutes before slicing, as it firms up as it cools.
