Bánh Cốm (Young Rice Cake)
One serving has 276 kcal and 8 g protein, and at least a fifth of a woman's daily need of folate (40%), manganese (36%) and copper (34%). Ready in 50 minutes.

- Preparation: 30 min
- Cooking: 20 min
- Makes: 1 serving (76 g)
- Difficulty: Medium
- Diets: Vegan, Gluten-free, Dairy-free
- Contains: alcohol
Ingredients
- 20 g Rice flour, glutinous
- 25 g Mung beans, dried
- 20 g Sugar
- 10 g Coconut, fresh
- 1 g Vanilla extract
Method
- Soak and steam the mung beans until very soft, then mash with half the sugar while hot into a smooth paste; this stands in for the traditional young rice ("cốm") coating, which isn't commonly available.
- Mix the glutinous rice flour with a little water and the remaining sugar into a soft, pliable dough, kneading in the grated coconut.
- Flatten a portion of the dough, place a spoonful of mung bean paste in the center and wrap the dough around it, shaping into a small flat square or oval cake.
- Steam the cakes for 15-20 minutes until the dough turns glossy and translucent.
- Cool before serving; this makes one portion (one cake), so multiply for more.
