Bánh Da Lợn (Layered Pandan Cake)
One serving has 399 kcal and 7 g protein, and at least a fifth of a woman's daily need of manganese (51%), copper (39%), folate (34%), magnesium (23%), phosphorus (22%) and iron (20%). Ready in 65 minutes.

- Preparation: 20 min
- Cooking: 45 min
- Makes: 1 serving (137 g)
- Difficulty: Medium
- Diets: Vegan, Gluten-free, Dairy-free
- Contains: alcohol
Ingredients
- 20 g Mung beans, dried
- 20 g Rice flour, glutinous
- 10 g Tapioca pearls, dry
- 60 g Coconut milk, canned
- 25 g Sugar
- 2 g Vanilla extract
Method
- Steam the mung beans until soft, then mash smooth with a little of the sugar; this makes the pale filling layer.
- Whisk the rice flour, tapioca pearls, coconut milk, remaining sugar and vanilla into a smooth batter for the second layer.
- Ladle a thin layer of one batter into a greased dish and steam 4-5 minutes until just set.
- Add a layer of the mung bean mixture, steam 4-5 minutes, then repeat alternating thin layers until the batters are used up, steaming each layer briefly before adding the next.
- Steam the finished cake a final 10 minutes, then cool completely before cutting into pieces, which makes slicing much easier.
