Ingredients

  • 30 g Mung beans, dried
  • 20 g Sugar, powdered
  • 3 g Coconut oil

Method

  1. Steam or boil the mung beans until very soft, then dry them out in a low oven or dry pan over low heat, stirring, until they can be ground into a fine, dry flour.
  2. Toast the mung bean flour lightly in a dry pan for a few minutes until fragrant.
  3. Mix the mung bean flour with the powdered sugar and coconut oil, kneading until it holds together when pressed.
  4. Press firmly into small molds (traditional ones are square) and pack tightly.
  5. Unmold carefully and let dry at room temperature for a few hours until firm; this makes one portion, so multiply for more.
