  • Difficulty: Medium
  • Diets: Gluten-free, Dairy-free
  • Contains: fish, pork

Ingredients

  • 50 g Rice flour
  • 250 g Water
  • 5 g Vegetable oil
  • 50 g Pork shoulder, raw
  • 3 g Wood ear mushrooms, dried
  • 10 g Shallots, raw
  • 6 g Fish sauce
  • 0.3 g Black pepper

Method

  1. Soak the wood ear mushroom in warm water until soft, then chop finely; mince the pork if using shoulder.
  2. Fry the shallot in a little of the oil until fragrant, add the pork and mushroom, and cook through with no pink remaining; season with half the fish sauce and the pepper.
  3. Whisk the rice flour with the water and remaining oil, then cook over medium heat, stirring constantly, for 8-10 minutes until it thickens into a smooth, sticky paste.
  4. Spoon some of the rice paste into a square of banana leaf or greased parchment, add a little pork filling in the center, top with more paste to enclose it, and fold into a pyramid shape; tie to secure.
  5. Steam the parcels for 25-30 minutes until firm all the way through.
  6. Unwrap and serve warm with the remaining fish sauce for drizzling.
