One serving has 427 kcal and 11 g protein, and at least a fifth of a woman's daily need of folate (57%), thiamin (44%), copper (37%), manganese (29%), selenium (29%) and vitamin K (27%). Ready in 70 minutes.

- Preparation: 40 min
- Cooking: 30 min
- Makes: 1 serving (117 g)
- Difficulty: Hard
- Diets: Vegetarian, Dairy-free
- Contains: egg, gluten
Ingredients
- 30 g Flour, all-purpose
- 12 g Vegetable oil
- 25 g Mung beans, dried
- 20 g Sugar
- 20 g Durian, raw
- 10 g Duck eggs, raw
Method
- Steam the mung beans until soft, mash smooth with the sugar, then cook briefly with the durian flesh over low heat, stirring, until it forms a thick paste; let cool.
- Mix the flour with the oil and a little water into a smooth dough, then roll and fold it over itself a few times to build flaky layers.
- Flatten a portion of dough, place a little mung bean-durian filling and a small piece of the duck egg (standing in for salted egg yolk) in the center, and wrap the dough around to seal into a round, flat disc.
- Place seam-side down on a lined tray and bake at 180 °C (350 °F) for 25-30 minutes until lightly golden.
- Cool before serving; this makes one portion (one pastry), so multiply for more.
