  • Diets: Gluten-free, Dairy-free
  • Contains: fish, pork, shellfish

Ingredients

  • 40 g Rice flour
  • 40 g Coconut milk, canned
  • 0.5 g Turmeric
  • 30 g Water
  • 5 g Scallions, raw
  • 40 g Shrimp, raw
  • 40 g Pork belly, raw
  • 40 g Bean sprouts, raw
  • 15 g Vegetable oil
  • 10 g Fish sauce
  • 5 g Sugar
  • 5 g Lime juice
  • 3 g Garlic, raw
  • 2 g Chili peppers, red, raw
  • 20 g Lettuce, leaf, raw
  • 3 g Mint, fresh

Method

  1. Whisk the rice flour, coconut milk, turmeric, water and scallions into a thin batter, then let it rest for 20-30 minutes.
  2. Make the dipping sauce (nuoc cham) by stirring together the fish sauce, sugar, lime juice, garlic and chilli with a splash of water.
  3. Slice the pork belly thinly and season lightly; peel the shrimp.
  4. Heat a little of the oil in a wide non-stick pan over medium-high heat, add the pork and cook for 2 minutes, then add the shrimp and cook 1-2 minutes more until both are cooked through.
  5. Pour in a thin layer of batter, swirling the pan so it coats the base, and scatter the bean sprouts over half of it.
  6. Cover and cook for 2-3 minutes until the edges turn lacy and crisp, then drizzle a little more oil around the edge and cook uncovered 2 minutes more until fully crisp.
  7. Fold the crepe in half over the filling, slide onto a plate, and serve wrapped in lettuce and mint with the dipping sauce.
