Ingredients

  • 90 g Rice noodles, dry
  • 100 g Pork loin, raw
  • 8 g Soy sauce
  • 5 g Sugar, brown
  • 0.5 g Anise seed
  • 5 g Garlic, raw
  • 10 g Pork rinds
  • 30 g Bean sprouts, raw

  • 8 g Vegetable oil
  • 5 g Scallions, raw

Method

  1. Marinate the pork loin in the soy sauce, brown sugar, five-spice (anise seed) and half the garlic for at least 20 minutes.
  2. Soak the thick rice noodles in hot water for 10-12 minutes until tender, then drain.
  3. Heat the oil in a pan and sear the marinated pork for 3-4 minutes per side until browned and cooked through (63°C/145°F), then rest for 5 minutes before slicing thinly.
  4. Add the remaining garlic and the water to the same pan, scraping up the browned bits, and simmer for 2 minutes to make a small amount of intense sauce.
  5. Warm the pork rinds in a dry pan for a minute to crisp them back up.
  6. Divide the noodles between bowls, moisten with a spoonful of the pan sauce, and top with the sliced pork, crisp pork rinds and bean sprouts.
  7. Finish with fresh mint and scallions, tossing everything together just before eating.
