Ingredients

  • 40 g Limes, raw
  • 1 g Salt
  • 20 g Sugar
  • 200 g Water

Method

  1. Slit each lime into quarters without cutting all the way through, and pack tightly into a clean jar with the salt.
  2. Seal and leave at room temperature for 3-4 weeks, until the limes turn soft, dark and pickled through, shaking the jar occasionally; the active work above is quick, but the curing itself needs those extra weeks.
  3. To serve, muddle one cured lime (skin and all) in a glass with the sugar.
  4. Warm the water briefly and pour over, stirring to dissolve the sugar, then add ice; top with soda water if you like.
