  • Cooking: 15 min
  • Makes: 1 serving (220 g)
  • Difficulty: Medium
  • Diets: Gluten-free, Dairy-free, Low carb
  • Contains: egg, fish, pork, shellfish

Ingredients

  • 120 g Shrimp, raw
  • 20 g Pork belly, raw
  • 7 g Garlic, raw
  • 10 g Shallots, raw
  • 13 g Fish sauce
  • 8 g Sugar
  • 5 g Cornstarch
  • 15 g Egg whites, raw
  • 5 g Lime juice
  • 2 g Chili peppers, red, raw
  • 15 g Water

Method

  1. Pat the shrimp very dry, then pulse them with the pork belly, garlic and shallots in a food processor until it forms a smooth, sticky paste.
  2. Mix in the cornstarch, egg white and half the fish sauce and sugar, then beat the paste with a spoon for a minute so it turns springy.
  3. With wet hands, mould a portion of the paste around a stick of fresh sugarcane if you have it, or a soaked bamboo skewer, into a short log.
  4. Grill over medium coals, or under a hot broiler, for 10-12 minutes, turning occasionally, until golden and cooked through (74°C/165°F; the paste should be firm and opaque, not pink or translucent inside).
  5. Meanwhile, stir the remaining fish sauce and sugar with the lime juice, chilli and water to make a quick dipping sauce.
  6. Serve the skewers hot, wrapped in lettuce and herbs if you like, with the dipping sauce alongside.
