  • Cooking: 5 min
  • Makes: 1 serving (105 g)
  • Difficulty: Medium
  • Diets: Vegetarian, Gluten-free, Low carb
  • Contains: dairy, egg

Ingredients

  • 20 g Egg yolks, raw
  • 20 g Sweetened condensed milk
  • 60 g Espresso
  • 5 g Sugar

Method

  1. Brew the espresso and pour into a small cup.
  2. Whisk the egg yolk, sweetened condensed milk and sugar vigorously (or with a hand mixer) for 3-5 minutes until pale, thick and foamy; use a very fresh, ideally pasteurized, egg, and note this drink contains raw egg, so it isn't suitable for pregnant women, young children or anyone vulnerable to foodborne illness.
  3. Spoon the whipped egg mixture over the hot coffee, letting it float on top like a foam.
  4. Serve immediately, stirring the egg foam into the coffee as you drink.
