  • Preparation: 15 min
  • Cooking: 30 min
  • Makes: 1 serving (360 g)
  • Difficulty: Medium
  • Diets: Gluten-free, Dairy-free, High protein
  • Contains: celery, fish, peanut, pork, poultry, shellfish

Ingredients

  • 90 g Rice noodles, dry
  • 1 g Turmeric
  • 80 g Pork shoulder, raw
  • 50 g Shrimp, raw
  • 5 g Garlic, raw
  • 10 g Shallots, raw
  • 15 g Peanuts, roasted
  • 80 g Chicken stock, homemade
  • 8 g Fish sauce
  • 3 g Sugar
  • 8 g Vegetable oil
  • 5 g Cilantro, fresh
  • 5 g Lime juice

Method

  1. Soak the rice noodles in hot water for 10 minutes, then drain; a pinch of the turmeric can be added to the soaking water for the noodles' traditional yellow tinge.
  2. Cut the pork shoulder into thin slices and peel the shrimp.
  3. Heat the oil in a pot, fry the shallots and garlic for 2 minutes, then add the pork and the remaining turmeric and cook for 4-5 minutes until browned.
  4. Add the shrimp, stock and fish sauce, bring to a gentle simmer, and cook for 15 minutes so the pork turns tender and the broth turns richly flavoured.
  5. Season with the sugar to balance the saltiness, keeping the broth intentionally small in quantity, just enough to moisten the noodles rather than a full soup.
  6. Divide the noodles between bowls, ladle over a small amount of the broth with the pork and shrimp, and scatter with crushed peanuts and cilantro.
  7. Serve with a wedge of lime to squeeze over just before eating.
