  • Diets: Gluten-free, Dairy-free, High protein
  • Contains: beef, celery, fish

Ingredients

  • 90 g Rice noodles, dry
  • 90 g Beef brisket, raw
  • 60 g Beef sirloin steak, raw
  • 200 g Beef broth
  • 220 g Water
  • 30 g Onions, raw
  • 10 g Ginger, fresh
  • 1 g Anise seed
  • 0.5 g Cinnamon
  • 6 g Fish sauce
  • 5 g Sugar
  • 10 g Scallions, raw
  • 5 g Cilantro, fresh
  • 30 g Bean sprouts, raw
  • 5 g Basil, fresh
  • 5 g Lime juice

Method

  1. Char the onion and ginger under a broiler or over a flame until blackened in spots, then rinse off the char.
  2. Toast the star anise (anise seed) and cinnamon in a dry pot until fragrant, then add the beef broth and water, the charred onion and ginger, and the brisket; simmer 1-1.5 hours until the brisket is tender.
  3. Remove the brisket, slice thinly, and season the broth with the fish sauce and sugar; strain out the solids if you like a clear broth.
  4. Cook the rice noodles in boiling water 3-4 minutes until tender, then drain and divide into bowls.
  5. Top the noodles with the sliced brisket and the raw sliced sirloin (the hot broth will cook it), then ladle the boiling broth over.
  6. Serve with bean sprouts, basil, cilantro, scallion and lime on the side.
