Ingredients
- 200 g Veal shank, raw
- 15 g Garlic, raw
- 1 g Salt
- 300 g Water
- 0.3 g Black pepper
Method
- This dish is traditionally made from cattle's feet and knuckles, simmered many hours for a rich, gelatinous broth; bone-in veal shank is the closest catalog stand-in, giving a similar collagen-rich result.
- Scrub the veal shank well and soak it in cold water for a couple of hours, changing the water once, to draw out impurities.
- Put the shank in a large pot, cover generously with the water, bring to a boil, skim well, then reduce to a bare simmer.
- Cover and simmer very gently 8-9 hours, topping up water as needed, until the meat is falling-off-the-bone tender and the broth is rich and pale.
- Lift out the meat, pull it from the bone, and return it to the pot; season only lightly, since salt and the raw crushed garlic are added at the table.
- Serve piping hot in bowls with the crushed garlic and salt on the side to stir in, and torn flatbread for dipping.
