- Preparation: 45 min
- Cooking: 30 min
- Makes: 1 serving (75.2 g)
- Difficulty: Medium
- Diets: Vegetarian
- Contains: dairy, egg, gluten
Ingredients
- 18 g Flour, all-purpose
- 10 g Butter, unsalted
- 6 g Sugar
- 8 g Eggs, whole, raw
- 20 g Dulce de leche
- 8 g Sour cream
- 5 g Chocolate, dark
- 0.2 g Baking soda
Method
- Makes 1 slice of a cake that serves about 16; multiply everything by 16 for the whole cake.
- Rub the butter into the flour, sugar and baking soda, then work in the egg to form a firm dough; roll it out very thin and bake in thin sheets at 180 °C (350 °F) for 6-8 minutes per sheet until lightly golden and crisp, like large cookies.
- Once cool, crumble the trimmings finely and set aside for coating the finished cake.
- Beat the dulce de leche with the sour cream until smooth and spreadable.
- Sandwich the baked layers together with the caramel cream, then coat the top and sides with more cream and press on the reserved crumbs.
- Grate the dark chocolate over the top and refrigerate at least a few hours, ideally overnight, so the layers soften before slicing.
