Ingredients

  • 25 g Phyllo dough
  • 18 g Almonds
  • 15 g Sugar
  • 0.3 g Cinnamon
  • 12 g Honey
  • 15 g Water
  • 3 g Lemon juice
  • 10 g Vegetable oil

Method

  1. Makes about 12 fingers (6 servings of 2); the quantities here are for one serving, so multiply by 6 for a full batch.
  2. Finely chop the almonds and mix with a third of the sugar and the cinnamon.
  3. Lay out a sheet of phyllo, brush lightly with a little of the oil, spoon the almond filling along one edge, and roll up into a tight finger shape, tucking in the ends.
  4. Fry the rolls in the remaining oil over medium heat, turning often, 3-4 minutes until golden and crisp all over.
  5. Meanwhile simmer the remaining sugar with the honey, water and lemon juice into a light syrup.
  6. Drain the hot fingers briefly, then dip or drizzle them generously with the warm syrup and let cool before serving.
