One serving has 528 kcal and 28 g protein, and at least a fifth of a woman's daily need of thiamin (108%), selenium (74%), pyridoxine (52%), niacin (51%), zinc (47%) and cobalamin (47%). Ready in 105 minutes.

- Preparation: 90 min
- Cooking: 15 min
- Makes: 1 serving (202 g)
- Difficulty: Medium
- Diets: Gluten-free, Dairy-free, Low carb
- Contains: alcohol, pork, sulphite
Ingredients
- 160 g Pork, ground, raw
- 25 g Wine, red
- 3 g Coriander seeds
- 1 g Lemon zest
- 3 g Garlic, raw
- 1.3 g Salt
- 0.5 g Black pepper
- 8 g Olive oil
Method
- Loukaniko is traditionally stuffed into natural casings and air-dried for weeks before grilling; this quicker version seasons and grills the pork fresh, the way many Cypriot households also enjoy it.
- Mix the pork mince with the wine, crushed coriander seeds, orange zest (used here in place of fresh orange peel), garlic, salt and pepper.
- Cover and refrigerate at least 1-2 hours, or overnight, so the flavors develop.
- Shape the mixture into small sausage-shaped patties.
- Heat the oil in a pan or on a grill over medium heat and cook the patties 4-5 minutes per side until well browned outside and cooked through to 71 °C (160 °F) inside.
- Rest 2-3 minutes before serving.
