  • Makes: 1 serving (63.3 g)
  • Difficulty: Easy
  • Diets: Gluten-free, Dairy-free, Low carb
  • Contains: beef

Ingredients

  • 50 g Beef, dried
  • 8 g Olive oil
  • 0.3 g Oregano, dried
  • 5 g Lemon juice

Method

  1. Tsamarella is traditionally whole goat leg, heavily salted and sun-dried for days, then briefly simmered with oregano; the catalog's cured dried beef is the nearest ready-made stand-in.
  2. Simmer the dried meat in a little water with the oregano for 8-10 minutes to soften it slightly and take up the herb's aroma, then drain and pat dry.
  3. Once cool, slice it very thinly against the grain.
  4. Arrange on a plate, drizzle with the olive oil and lemon juice.
  5. Serve as a meze alongside olives, bread and wine.
