- Preparation: 490 min
- Cooking: 60 min
- Makes: 1 serving (380 g)
- Difficulty: Medium
- Diets: Vegan, Gluten-free, Dairy-free
Ingredients
- 60 g Fava beans, dried
- 60 g Tomato puree
- 40 g Onions, raw
- 5 g Garlic, raw
- 1.5 g Cumin
- 10 g Olive oil
- 3 g Cilantro, fresh
- 0.8 g Salt
- 200 g Water
Method
- Soak the dried fava beans overnight, then drain; for the traditional sprouted version, keep them moist in a covered colander for 2-3 more days, rinsing daily, until short sprouts appear, or simply proceed straight to cooking if short on time.
- Heat the oil in a pot and soften the chopped onion and garlic, about 5 minutes.
- Add the beans, tomato puree, cumin and water, bring to a boil, then boil hard 10 minutes.
- Reduce the heat, cover and simmer 45-60 minutes until the beans are completely tender and the soup has thickened slightly.
- Season with the salt, scatter with cilantro and serve hot.
