  • Makes: 1 serving (81 g)
  • Difficulty: Easy
  • Diets: Vegan, Gluten-free, Dairy-free, Low carb
  • Contains: nut, sulphite

Ingredients

  • 40 g Chili peppers, red, raw
  • 15 g Garlic, raw
  • 10 g Walnuts
  • 5 g Cilantro, fresh
  • 3 g Dill, fresh
  • 0.5 g Fenugreek seeds
  • 1 g Coriander seeds
  • 5 g Vinegar, red wine
  • 1.5 g Salt

Method

  1. Makes about 200 g of relish (about 4 servings as a condiment); the quantities here are for one serving, so multiply by 4 for a jar to keep.
  2. Deseed the chilies if you want it milder, then roughly chop them with the garlic, walnuts, cilantro and dill.
  3. Grind the fenugreek and coriander seeds finely if not already ground.
  4. Blend or pound everything together with the ground spices, vinegar and salt into a coarse, thick paste.
  5. Simmer the paste gently for 3-5 minutes to soften the raw edge and help it keep longer, then cool completely.
  6. Store in a sealed jar in the fridge and use sparingly as a fiery condiment with grilled meat, cheese or bread.
